Ingredients
- 2 whole wheat pita bread, cut into small squares
- 2 tablespoons olive oil
- 1 teaspoon sumac
- 1 head romaine lettuce, chopped
- 1 cucumber, diced
- 2 tomatoes, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup lemon juice
- 3 tablespoons extra virgin olive oil
- 1 teaspoon minced garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 350 degrees F.
- In a bowl, toss the pita bread squares with 2 tablespoons of olive oil and 1 teaspoon of sumac. Spread them on a baking sheet and bake for 10 minutes, or until crispy. Set aside to cool.
- In a large salad bowl, combine the chopped romaine lettuce, diced cucumber, tomatoes, red bell pepper, red onion, parsley, and mint.
- In a small bowl, whisk together the lemon juice, extra virgin olive oil, minced garlic, salt, and black pepper to make the dressing.
- Pour the dressing over the salad and toss to combine.
- Add the crispy pita bread squares to the salad just before serving to maintain their crunch.
