  • 1 lb of shrimp, peeled and deveined
  • 2 tbsp of olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 can (14 oz) of diced tomatoes
  • 1/2 cup of chicken broth
  • 1/4 cup of heavy cream
  • 2 tsp of Cajun seasoning
  • 1/2 tsp of dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • In the same skillet, heat the remaining 1 tbsp of olive oil. Add the chopped onion, garlic, and red bell pepper. Cook until the vegetables are softened, about 5 minutes.
  • Stir in the diced tomatoes, chicken broth, heavy cream, Cajun seasoning, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook for 5 minutes, allowing the flavors to meld together.
  • Add the cooked penne pasta and cooked shrimp to the skillet. Toss everything together until the pasta and shrimp are coated with the sauce.
