Created by: Howcan Team
Ingredients
- 1 cup quinoa
- 2 cups water
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/2 cup cherry tomatoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cucumber, diced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- 1 cup hummus
- 12 falafel balls
- 1 cup mixed fresh vegetables (such as bell peppers, carrots, and celery)
Instructions
- Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool.
- In a large bowl, combine the cooked quinoa, chopped parsley, chopped mint, diced cherry tomatoes, finely chopped red onion, and diced cucumber.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine. Refrigerate for at least 30 minutes to let the flavors meld.
- While the quinoa tabbouleh is chilling, heat the falafel balls according to package instructions.
- Arrange the quinoa tabbouleh, hummus, falafel, and mixed fresh vegetables on a large platter. Serve and enjoy!
