  • 12 falafel balls

Instructions

  • In a large bowl, combine the cooked quinoa, chopped parsley, chopped mint, diced cherry tomatoes, finely chopped red onion, and diced cucumber.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the quinoa mixture and toss to combine. Refrigerate for at least 30 minutes to let the flavors meld.
  • While the quinoa tabbouleh is chilling, heat the falafel balls according to package instructions.
