Instructions

  • Preheat your Traeger grill to 225°F according to manufacturer's instructions.
  • Rinse the chicken and pat dry with paper towels. Rub the olive oil all over the chicken, then season with Traeger chicken rub, making sure to coat the entire chicken, including the cavity.
  • Place the chicken directly on the grill grates and smoke for 2-3 hours, or until the internal temperature reaches 165°F in the thickest part of the thigh. Use a meat thermometer to check for doneness.
  • While the chicken is smoking, prepare the honey glaze. In a small saucepan, combine the honey, soy sauce, minced garlic, ground ginger, black pepper, and cayenne pepper. Cook over medium heat, stirring occasionally, until the mixture comes to a simmer.
  • In a small bowl, whisk together the cornstarch and water to create a slurry. Slowly pour the slurry into the honey mixture, stirring constantly. Cook for an additional 2-3 minutes, or until the glaze has thickened slightly. Remove from heat and set aside.
