Chicken Liver and Vegetable Stir-Fry

Ingredients
- 1 lb chicken liver, cleaned and sliced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp cornstarch
- 1/2 tsp sugar
- 1/4 cup chicken broth
- 2 tbsp vegetable oil
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- Salt and pepper to taste
- Cooked rice or noodles for serving
Instructions
- In a bowl, marinate the sliced chicken liver with 1 tbsp soy sauce, oyster sauce, cornstarch, and sugar. Set aside for 10 minutes.
- In a small bowl, mix the remaining 1 tbsp soy sauce with chicken broth and set aside.
- Heat 1 tbsp of vegetable oil in a large skillet or wok over high heat. Add the marinated chicken liver and stir-fry for 2-3 minutes until cooked through. Remove from the skillet and set aside.
- Add the remaining 1 tbsp of vegetable oil to the skillet. Add the onion, bell pepper, broccoli, and snap peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Add the minced garlic and grated ginger to the skillet and stir-fry for another 1 minute.
- Return the cooked chicken liver to the skillet. Pour in the soy sauce and chicken broth mixture. Stir-fry for 1-2 minutes until everything is heated through and well combined.
- Season with salt and pepper to taste.
- Serve the chicken liver and vegetable stir-fry over cooked rice or noodles. Enjoy!
