Ingredients
- 1 block (14 oz) of extra firm tofu, pressed and sliced into 1/2 inch thick rectangles
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 2 cloves of garlic, minced
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of cherry tomatoes, halved
- 1/2 English cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/2 cup of Kalamata olives
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of hummus
- 4 pita bread, toasted
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of lemon juice, minced garlic, dried oregano, dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Place the sliced tofu in a shallow dish and pour the marinade over the tofu. Gently toss to coat the tofu. Let it marinate for at least 15 minutes.
