Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onion and minced garlic, and sauté until softened, about 3 minutes.
  • Stir in the diced red and green bell peppers, and cook for another 5 minutes until they begin to soften.
  • Add the diced zucchinis and cook for an additional 3 minutes.
  • Stir in the chopped tomatoes, paprika, salt, and pepper. Cook for 10 minutes, stirring occasionally, until the vegetables are tender and the mixture has thickened.
  • In a separate skillet, cook the sliced chorizo over medium heat until it is browned and crispy, about 5 minutes.
  • Add the cooked chorizo to the vegetable mixture and stir to combine.
  • If using eggs, create 4 wells in the vegetable mixture and crack an egg into each well. Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny.
  • Garnish with fresh parsley and serve hot.
