Ingredients
- 4 cups of sliced zucchini
- 1/2 cup of chopped onion
- 2 tablespoons of butter
- 2 eggs
- 1/2 cup of sour cream
- 1/2 cup of shredded cheddar cheese
- 1/2 cup of shredded mozzarella cheese
- 1/4 cup of grated Parmesan cheese
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of dried oregano
- 1/4 teaspoon of dried basil
- 1/4 cup of breadcrumbs
Instructions
- Preheat the oven to 350 degrees F. Grease a 9x9 inch baking dish.
- In a large skillet, sauté 4 cups of sliced zucchini and 1/2 cup of chopped onion in 2 tablespoons of butter until tender.
- In a separate bowl, beat 2 eggs and mix in 1/2 cup of sour cream, 1/2 cup of shredded cheddar cheese, 1/2 cup of shredded mozzarella cheese, 1/4 cup of grated Parmesan cheese, 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of garlic powder, 1/4 teaspoon of dried oregano, and 1/4 teaspoon of dried basil.
- Stir the cooked zucchini and onion into the cheese mixture and pour into the prepared baking dish.
- Sprinkle 1/4 cup of breadcrumbs on top of the casserole.
- Bake for 30-35 minutes, or until the casserole is set and the top is golden brown.
