Ingredients
- 2 pounds fresh mussels, cleaned and debearded
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1 cup chicken or vegetable broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Pour in the white wine and bring to a simmer.
- Add the chicken or vegetable broth and bring to a boil.
- Carefully add the cleaned mussels to the pot and cover with a lid.
- Steam the mussels for 5-7 minutes, shaking the pot occasionally, until the mussels have opened.
- Discard any mussels that have not opened.
- Season the steamed mussels with salt and pepper to taste, then sprinkle with chopped fresh parsley.
- Serve the steamed mussels in bowls with the broth and crusty bread on the side for dipping.
