  • In a large skillet, cook 4 slices of chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon grease in the skillet.
  • Add 1 diced small onion to the skillet and cook until softened, about 3 minutes.
  • Stir in 2 cups of diced potatoes and cook until they are golden and crispy, about 10 minutes.
  • Add 1 diced bell pepper to the skillet and cook for an additional 2 minutes.
  • Create 4 wells in the potato mixture and crack an egg into each well. Season the eggs with salt and pepper.
  • Sprinkle 1/2 cup of shredded cheddar cheese over the skillet and cover with a lid. Cook until the eggs are set to your desired doneness, about 5-7 minutes for runny yolks.
