Instructions

  • In a large bowl, combine the rye flour, bread flour, caraway seeds, and salt.
  • In a small bowl, dissolve the yeast in the warm water and 2 tablespoons of honey. Let it sit for 5 minutes until it becomes frothy.
  • Make a well in the center of the dry ingredients and pour in the yeast mixture and melted butter. Stir until a dough forms.
  • Turn the dough out onto a floured surface and knead for 8-10 minutes, or until the dough is smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Preheat the oven to 375°F (190°C).
  • Punch down the dough and shape it into a loaf. Place the loaf on a greased baking sheet and let it rise for an additional 30 minutes.
  • Bake the bread for 30-35 minutes, or until it is golden brown and sounds hollow when tapped on the bottom.
  • While the bread is still warm, brush the top with 2 tablespoons of honey for a sweet glaze.
  • Allow the bread to cool before slicing and serving. Enjoy!
