Ingredients
- 4 slices of whole grain bread
- 1 ripe avocado, sliced
- 4 slices of cooked bacon
- 4 eggs
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Crack 4 eggs into the skillet and cook to desired doneness, seasoning with salt and pepper.
- While the eggs are cooking, toast 4 slices of whole grain bread.
- Once the eggs are done, remove them from the skillet and set aside.
- On 2 slices of toasted bread, layer the sliced avocado and cooked bacon.
- Top each with 2 cooked eggs and the remaining 2 slices of toasted bread to make 2 sandwiches.
- Slice each sandwich in half and serve immediately.
