Instructions

  • Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
  • Crack 4 eggs into the skillet and cook to desired doneness, seasoning with salt and pepper.
  • While the eggs are cooking, toast 4 slices of whole grain bread.
  • Once the eggs are done, remove them from the skillet and set aside.
  • On 2 slices of toasted bread, layer the sliced avocado and cooked bacon.
  • Top each with 2 cooked eggs and the remaining 2 slices of toasted bread to make 2 sandwiches.
  • Slice each sandwich in half and serve immediately.
