  • 1 block of firm tofu, drained and cubed
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sriracha sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of vegetable oil
  • 1 teaspoon of minced ginger
  • 1 teaspoon of minced garlic
  • 1 cup of mixed vegetables (bell peppers, broccoli, carrots, snap peas)
  • 1 teaspoon of cornstarch
  • 1/4 cup of water
  • Salt and pepper to taste
  • 4 pieces of garlic naan

Instructions

  • In a small bowl, mix together 2 tablespoons of soy sauce, 1 tablespoon of sriracha sauce, and 1 tablespoon of sesame oil. Set aside.
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and stir-fry for 5-7 minutes, until golden brown. Remove tofu from the skillet and set aside.
  • In the same skillet, add 1 teaspoon of minced ginger and 1 teaspoon of minced garlic. Stir-fry for 1 minute.
  • Add 1 cup of mixed vegetables to the skillet and stir-fry for 3-4 minutes, until they are tender-crisp.
  • Return the tofu to the skillet with the vegetables. Pour the sauce mixture over the tofu and vegetables. Stir to combine.
  • In a small bowl, mix 1 teaspoon of cornstarch with 1/4 cup of water. Add the cornstarch mixture to the skillet and stir-fry for 1-2 minutes, until the sauce thickens.
  • Season with salt and pepper to taste. Remove from heat.
  • Heat the garlic naan according to package instructions.
  • Serve the spicy stir-fried tofu and mixed vegetables with the garlic naan. Enjoy!
