Hawaiian Luau

Ingredients
- 1 whole pig, cleaned and dressed (40-50 pounds)
- 5 cups of soy sauce
- 3 cups of brown sugar
- 2 cups of pineapple juice
- 1 cup of rice vinegar
- 1/2 cup of sesame oil
- 10 cloves of garlic, minced
- 5 tablespoons of ginger, grated
- 10 cups of cooked white rice
- 4 cups of coconut milk
- 3 pounds of fresh pineapple, peeled, cored, and cut into chunks
- 3 pounds of assorted seafood (shrimp, fish, squid)
- 4 cups of shredded coconut
- 2 cups of macadamia nuts, chopped
- 8 cups of mixed tropical fruits (mango, papaya, guava)
- 1 cup of sugar
- 1/2 cup of lime juice
- 1/4 cup of mint leaves, chopped
Instructions
- Preheat a large outdoor grill for high heat.
- In a large bowl, mix together 5 cups of soy sauce, 3 cups of brown sugar, 2 cups of pineapple juice, 1 cup of rice vinegar, 1/2 cup of sesame oil, 10 cloves of minced garlic, and 5 tablespoons of grated ginger to create a marinade.
- Rub the marinade all over the whole pig, inside and out. Let it marinate for at least 1 hour.
- Place the pig on the grill and cook for 2 hours, turning occasionally, until the internal temperature reaches 165°F. Remove from the grill and let it rest for 30 minutes before carving.
- In a large pot, combine 10 cups of cooked white rice and 4 cups of coconut milk. Cook over low heat for 15-20 minutes, stirring occasionally, until the rice is creamy and tender.
- Thread the assorted seafood onto skewers and grill for 5-7 minutes, turning once, until cooked through.
- In a large serving bowl, combine 3 pounds of pineapple chunks, 4 cups of shredded coconut, and 2 cups of chopped macadamia nuts to make a tropical fruit salad.
- In a separate bowl, toss 8 cups of mixed tropical fruits with 1 cup of sugar, 1/2 cup of lime juice, and 1/4 cup of chopped mint leaves to make a fruit salsa.
- Serve the grilled pig, coconut rice, seafood skewers, tropical fruit salad, and fruit salsa on large platters for a traditional Hawaiian luau feast.
