  • 8 oz beef sirloin, thinly sliced
  • 8 oz dried rice noodles
  • 6 cups beef broth
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 red chili, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tsp chili flakes
  • 1/2 cup bean sprouts
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, chopped
  • 1 lime, cut into wedges

Instructions

  • In a large pot, bring the beef broth to a boil.
  • Add the thinly sliced beef sirloin to the boiling broth and cook for 2-3 minutes until the beef is cooked through. Remove the beef from the pot and set aside.
  • In the same pot, add the dried rice noodles and cook according to package instructions. Once cooked, drain and set aside.
  • In a separate pan, heat some oil over medium heat and sauté the sliced onion, minced garlic, and red chili until fragrant.
  • Add the sautéed mixture to the pot of beef broth. Stir in the soy sauce, fish sauce, brown sugar, and chili flakes. Let the soup simmer for 5-10 minutes to allow the flavors to meld.
  • Divide the cooked rice noodles among serving bowls. Top with the cooked beef slices and bean sprouts.
  • Ladle the hot and spicy beef broth over the noodles and beef. Garnish with chopped cilantro, green onions, and a squeeze of lime juice.
  • Serve hot and enjoy!
