Instructions

  • Preheat the oven to 325°F (163°C).
  • In a medium bowl, mix together 2 cups of graham cracker crumbs, 1/4 cup of granulated sugar, and 1/2 cup of melted unsalted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and let it cool.
  • In a large bowl, beat 4 packages of softened cream cheese, 1 cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth. Add in 4 large eggs, one at a time, mixing well after each addition. Stir in 1/4 cup of heavy cream.
  • Divide the cheesecake batter into three equal portions. Tint one portion with purple food coloring gel, one with blue, and one with pink. Drop spoonfuls of the colored batters randomly over the crust in the pan.
  • Use a knife to gently swirl the colors together to create a nebula-like pattern.
  • Bake the cheesecake for 55-60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  • Remove the cheesecake from the oven and run a knife around the edges to loosen. Refrigerate for at least 4 hours or overnight.
  • Before serving, sprinkle edible silver star sprinkles over the top of the cheesecake for a cosmic effect. Slice and enjoy!
