Instructions

  • In a small bowl, mix 2 tablespoons of chipotle peppers in adobo sauce, 1 tablespoon of olive oil, 1 teaspoon of cumin, 1/2 teaspoon of paprika, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
  • Pound the chicken breasts to an even thickness and coat them with the chipotle mixture. Let them marinate for 10 minutes.
  • Heat a grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes on each side, or until cooked through.
  • Toast the bread slices until golden brown.
  • Assemble the sandwiches by spreading mayonnaise on each slice of bread. Place a lettuce leaf and tomato slices on one slice of bread.
