  • 1 pound of shrimp, peeled and deveined
  • 4 tablespoons of butter
  • 1/2 cup of chopped onion
  • 1/2 cup of chopped celery
  • 1/2 cup of chopped carrots
  • 2 cloves of garlic, minced
  • 1/4 cup of all-purpose flour
  • 4 cups of seafood or chicken broth
  • 1 cup of heavy cream
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons of chopped fresh parsley

  • Salt and pepper to taste
  • 2 tablespoons of chopped fresh parsley

Instructions

  • In a large pot, melt 2 tablespoons of butter over medium heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes. Remove the shrimp from the pot and set aside.
  • In the same pot, melt the remaining 2 tablespoons of butter. Add the onion, celery, and carrots, and cook until the vegetables are softened, about 5 minutes. Add the garlic and cook for an additional 1-2 minutes.
  • Stir in the flour and cook for 1-2 minutes to make a roux.
  • Gradually whisk in the seafood or chicken broth, making sure there are no lumps from the flour. Bring the mixture to a simmer and cook for 15-20 minutes, or until the vegetables are tender.
  • Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return to the pot.
  • Stir in the heavy cream and cayenne pepper. Season with salt and pepper to taste.
  • Chop half of the cooked shrimp and add them to the bisque. Reserve the remaining shrimp for garnish.
  • Simmer the bisque for an additional 5-10 minutes to allow the flavors to meld together.
  • Ladle the shrimp bisque into bowls and garnish with the remaining whole shrimp and chopped parsley. Serve hot and enjoy!
