Ingredients
- For Matzo Ball Soup:
- 4 eggs
- 1/4 cup vegetable oil
- 1 cup matzo meal
- 4 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced

- For Roasted Chicken:
- 1 whole chicken, about 4 lbs
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- For Charoset:
- 2 apples, peeled and chopped
- 1/2 cup chopped walnuts
- 1 teaspoon cinnamon
- 2 tablespoons honey
- 1/4 cup sweet red wine
Instructions
- For Matzo Ball Soup:
- In a bowl, beat 4 eggs and mix in 1/4 cup of vegetable oil. Stir in 1 cup of matzo meal and refrigerate for 30 minutes.
- In a large pot, bring 4 cups of chicken broth to a boil. Add sliced carrots, celery, and chopped onion. Season with salt and pepper.
- Form the matzo mixture into balls and drop them into the boiling broth. Reduce heat, cover, and simmer for 30 minutes.
- For Roasted Chicken:
- Preheat the oven to 375°F. Rinse the chicken and pat dry with paper towels.
- In a small bowl, mix together olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper. Rub the mixture over the chicken.
- Place the chicken in a roasting pan and roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F. Let it rest for 10 minutes before carving.
- For Charoset:
- In a bowl, combine chopped apples, chopped walnuts, cinnamon, honey, and sweet red wine. Mix well and refrigerate until ready to serve.
- Serve the matzo ball soup, roasted chicken, and charoset as part of the Passover Seder meal.
