  • In a large pot, bring 4 cups of chicken broth to a boil. Add sliced carrots, celery, and chopped onion. Season with salt and pepper.
  • Form the matzo mixture into balls and drop them into the boiling broth. Reduce heat, cover, and simmer for 30 minutes.
  • For Roasted Chicken:
  • Preheat the oven to 375°F. Rinse the chicken and pat dry with paper towels.
  • In a small bowl, mix together olive oil, paprika, garlic powder, onion powder, thyme, salt, and pepper. Rub the mixture over the chicken.
  • Place the chicken in a roasting pan and roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F. Let it rest for 10 minutes before carving.
  • For Charoset:
  • In a bowl, combine chopped apples, chopped walnuts, cinnamon, honey, and sweet red wine. Mix well and refrigerate until ready to serve.
