Instructions

  • Preheat the oven to 400°F (200°C).
  • Toss the mixed vegetables with 1 tbsp of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes, or until tender and slightly charred.
  • While the vegetables are roasting, season the sea bass fillets with salt and pepper.
  • Heat the remaining 1 tbsp of olive oil in a large skillet over medium-high heat. Add the sea bass fillets, skin side down, and cook for 3-4 minutes until the skin is crispy and golden brown. Carefully flip the fillets and cook for an additional 2-3 minutes, or until the fish is cooked through and flakes easily with a fork. Remove the fillets from the skillet and set aside.
  • In the same skillet, reduce the heat to medium and add the melted butter and minced garlic. Cook for 1-2 minutes, stirring constantly, until the garlic is fragrant and the butter is infused with the garlic flavor.
  • Return the sea bass fillets to the skillet, spoon the garlic butter sauce over the fillets, and sprinkle with chopped parsley. Squeeze fresh lemon juice over the fish.
  • Serve the pan-seared sea bass with the roasted vegetables on the side. Enjoy!
