Ingredients
- 4 boneless, skinless chicken breasts
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno pepper, seeded and minced
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 teaspoon honey
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt and pepper.
- In a bowl, combine the diced mangoes, red onion, red bell pepper, cilantro, jalapeno, lime juice, olive oil, honey, cumin, and a pinch of salt. Mix well to make the mango salsa.
- Grill the chicken breasts for 6-7 minutes on each side, or until fully cooked and grill marks appear.
- Remove the chicken from the grill and let it rest for a few minutes.
- Top the grilled chicken with the mango salsa and serve immediately.
