Mediterranean Chickpea Salad

Ingredients
- 2 cans (15 oz) of chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine 2 cans of chickpeas, 1 diced cucumber, 1 cup of halved cherry tomatoes, 1/2 finely chopped red onion, 1/2 cup of halved Kalamata olives, and 1/4 cup of chopped fresh parsley.
- In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and salt and pepper to taste.
- Pour the dressing over the chickpea mixture and toss to coat evenly.
- Sprinkle 1/4 cup of crumbled feta cheese on top before serving.
- Serve immediately and enjoy!
