  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • In a large mixing bowl, combine 2 cans of chickpeas, 1 diced cucumber, 1 cup of halved cherry tomatoes, 1/2 finely chopped red onion, 1/2 cup of halved Kalamata olives, and 1/4 cup of chopped fresh parsley.
  • In a small bowl, whisk together 1/4 cup of extra virgin olive oil, 2 tablespoons of red wine vinegar, 1 teaspoon of dried oregano, and salt and pepper to taste.
  • Pour the dressing over the chickpea mixture and toss to coat evenly.
  • Sprinkle 1/4 cup of crumbled feta cheese on top before serving.
  • Serve immediately and enjoy!
