Ingredients
- 1 cup gluten-free flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- 1/2 cup flaked saltfish, soaked and shredded
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 2 cloves garlic, minced
- 1/4 cup chopped scallions
- 1/4 cup chopped parsley
- 1/2 teaspoon thyme
- 1/4 teaspoon cayenne pepper
- Vegetable oil for frying
Instructions
- In a large bowl, mix 1 cup of gluten-free flour, 1 teaspoon of baking powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Gradually add 1/2 cup of water to the dry ingredients, stirring until smooth.
- Stir in 1/2 cup of soaked and shredded saltfish, 1/4 cup of chopped onion, 1/4 cup of chopped bell pepper, 2 cloves of minced garlic, 1/4 cup of chopped scallions, 1/4 cup of chopped parsley, 1/2 teaspoon of thyme, and 1/4 teaspoon of cayenne pepper. Mix well to combine all ingredients.
- In a large skillet, heat vegetable oil over medium-high heat.
- Drop spoonfuls of the saltfish mixture into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
