Tiramisu Cake

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/4 cup strong brewed coffee, cooled
  • 8 ounces mascarpone cheese
  • 1/2 cup powdered sugar
  • 1/4 cup coffee liqueur
  • 1/2 cup heavy cream
  • 2 tablespoons unsweetened cocoa powder

Instructions

  • Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
  • In a medium bowl, whisk together 1 1/2 cups of flour, 1 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
  • In a large bowl, cream 1/2 cup of softened butter and 1 cup of granulated sugar until light and fluffy. Add in 3 eggs, one at a time, beating well after each addition. Stir in 1 teaspoon of vanilla extract.
  • Gradually add the flour mixture to the wet ingredients, alternating with 1/2 cup of whole milk, beginning and ending with the flour mixture. Mix until just combined. Do not overmix.
  • Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • In a small bowl, combine 1/4 cup of cooled strong brewed coffee and 1/4 cup of coffee liqueur. Set aside.
  • In another bowl, beat 8 ounces of mascarpone cheese and 1/2 cup of powdered sugar until smooth. In a separate bowl, whip 1/2 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until smooth and creamy.
  • To assemble the cake, place one layer of the cooled cake on a serving plate. Brush the top with half of the coffee mixture. Spread half of the mascarpone cream mixture over the cake layer. Place the second cake layer on top and brush with the remaining coffee mixture. Spread the remaining mascarpone cream mixture over the top of the cake.
  • Dust the top of the cake with 2 tablespoons of unsweetened cocoa powder. Refrigerate for at least 2 hours before serving to allow the flavors to meld together. Enjoy!
