Created by: Howcan Team
Ingredients
- 4 swordfish steaks (6 oz each)
- 1/4 cup orange juice
- 1/4 cup lemon juice
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1/4 cup olive oil
- Salt and pepper to taste
- 2 cups mixed vegetables (bell peppers, zucchini, cherry tomatoes)
- 2 tbsp balsamic vinegar
- 2 tbsp chopped fresh herbs (such as parsley or thyme)
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, whisk together 1/4 cup orange juice, 1/4 cup lemon juice, 2 tbsp honey, minced garlic, grated ginger, and 1/4 cup olive oil to make the citrus glaze. Season with salt and pepper to taste.
- Brush the swordfish steaks with the citrus glaze and let them marinate for 10 minutes.
- While the swordfish is marinating, toss the mixed vegetables with 2 tbsp balsamic vinegar, 2 tbsp olive oil, and salt and pepper to taste. Spread them on a baking sheet in a single layer.
- Place the marinated swordfish steaks on the preheated grill and cook for 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
- At the same time, roast the vegetables in the oven at 400°F for 15-20 minutes, or until they are tender and slightly caramelized.
- Once the swordfish is cooked, remove it from the grill and let it rest for a few minutes.
- Serve the grilled swordfish with the roasted vegetables, drizzle with any remaining citrus glaze, and sprinkle with chopped fresh herbs. Enjoy!
Grilled Swordfish with Citrus Glaze is a dish that has been enjoyed for centuries, with its origins tracing back to Mediterranean coastal regions. The succulent swordfish is marinated in a zesty citrus glaze, infusing it with a burst of tangy flavor. The dish is often paired with a side of roasted vegetables, adding a delightful contrast of textures and flavors. Renowned chefs like Jamie Oliver and Gordon Ramsay have popularized this dish, showcasing their unique twists on the classic recipe. The best version of this dish can be found in coastal restaurants along the Mediterranean, where the swordfish is freshly caught and expertly prepared. The key to perfecting this dish lies in the quality of the swordfish and the balance of the citrus glaze. The swordfish should be grilled to perfection, retaining its natural juiciness, while the citrus glaze should be a harmonious blend of sweet and tangy notes. For a unique alternative, some chefs opt to pan-sear the swordfish before finishing it in the oven, resulting in a beautifully caramelized exterior and a moist, tender interior. This method adds an extra depth of flavor to the dish, making it a must-try for seafood enthusiasts. When preparing this dish at home, sourcing fresh swordfish and using a medley of vibrant, seasonal vegetables for roasting are essential. The marriage of the citrus-glazed swordfish and the caramelized roasted vegetables creates a symphony of flavors that is sure to tantalize the taste buds.
