Ingredients

  • 2 whole wheat pitas, cut into small squares
  • 2 tablespoons olive oil
  • 1 teaspoon sumac
  • 1 teaspoon dried mint
  • 1 head romaine lettuce, chopped
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  • Preheat the oven to 375 degrees F.
  • In a bowl, toss the pita squares with 2 tablespoons of olive oil, sumac, and dried mint. Spread them on a baking sheet and bake for 8-10 minutes, or until crispy and golden brown. Set aside to cool.
  • In a large salad bowl, combine the chopped romaine lettuce, diced cucumber, diced tomatoes, thinly sliced red onion, chopped parsley, and chopped mint.
  • In a small bowl, whisk together the lemon juice, 1/4 cup of olive oil, salt, and black pepper to make the dressing.
  • Pour the dressing over the salad and toss to combine.
  • Add the crispy pita chips to the salad just before serving to keep them crunchy.
  • Serve the fattoush immediately and enjoy!
