  • Heat a non-stick skillet over medium heat and melt the butter.
  • Pour the beaten eggs into the skillet and cook, stirring occasionally, until just set, about 3-4 minutes. Remove from heat.
  • Place 2 tortillas on a clean work surface. Sprinkle half of the shredded cheddar cheese evenly over the tortillas.
  • Divide the scrambled eggs equally between the two tortillas, spreading them over the cheese.
  • Arrange the avocado slices on top of the eggs, then sprinkle the remaining cheese over the avocado slices.
  • Top each with the remaining 2 tortillas to form quesadillas.
  • Return the skillet to medium heat and carefully transfer one quesadilla to the skillet. Cook until the bottom tortilla is golden brown and the cheese is melted, about 2-3 minutes.
  • Carefully flip the quesadilla and cook the other side until golden brown and the cheese is melted, about 2-3 minutes more.
  • Repeat with the second quesadilla.
  • Remove from the skillet and let cool for a minute before slicing each quesadilla into wedges.
  • Serve hot and enjoy!
