Memphis BBQ Ribs

Created by: Howcan Team

Ingredients

  • 2 racks of pork baby back ribs
  • 1/4 cup of Memphis-style dry rub seasoning
  • 1 cup of Memphis-style BBQ sauce
  • 1/4 cup of apple cider vinegar
  • 1/4 cup of brown sugar
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of cayenne pepper
  • Salt and pepper to taste

Instructions

  • Preheat your grill to 275°F using indirect heat. If using a charcoal grill, place the coals on one side and the ribs on the other. If using a gas grill, only turn on one side of the burners.
  • Remove the membrane from the back of the ribs by sliding a butter knife under the membrane and then using a paper towel to grip and pull it off.
  • Season the ribs generously with 1/4 cup of Memphis-style dry rub seasoning, making sure to coat both sides evenly. Let the ribs sit at room temperature for 15 minutes to allow the rub to adhere.
  • Place the ribs on the grill, bone side down, and cook for 2.5 to 3 hours, or until the meat is tender and starts to pull away from the bones. Rotate the ribs every 30 minutes for even cooking.
  • In a small saucepan, combine 1 cup of Memphis-style BBQ sauce, 1/4 cup of apple cider vinegar, 1/4 cup of brown sugar, 1 tablespoon of Worcestershire sauce, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1/2 teaspoon of cayenne pepper. Simmer over low heat for 10 minutes, stirring occasionally.
  • During the last 15 minutes of cooking, baste the ribs with the BBQ sauce mixture every 5 minutes, allowing the sauce to caramelize and create a sticky glaze.
  • Once the ribs are done, remove them from the grill and let them rest for 10 minutes before slicing and serving. Enjoy your delicious Memphis BBQ ribs!

Memphis BBQ ribs have a rich history deeply rooted in the heart of Tennessee. This iconic dish is known for its tender, slow-cooked pork ribs, generously coated in a tangy, sweet, and slightly spicy dry rub. The tradition of Memphis BBQ ribs dates back to the early 20th century, with legendary pitmasters like Charlie Vergos, founder of the famed Rendezvous restaurant, perfecting the art of dry-rubbed ribs cooked low and slow over a smoky charcoal fire. Today, Memphis remains a mecca for BBQ enthusiasts, with renowned establishments like Central BBQ and The Bar-B-Q Shop serving up mouthwatering ribs that have become synonymous with the city's culinary identity. The key to authentic Memphis BBQ ribs lies in the perfect balance of seasoning, smoke, and tenderness, making it a must-try for any BBQ aficionado.
