Memphis BBQ Ribs

Ingredients
- 2 racks of pork baby back ribs
- 1/4 cup of Memphis-style dry rub seasoning
- 1 cup of Memphis-style BBQ sauce
- 1/4 cup of apple cider vinegar
- 1/4 cup of brown sugar
- 1 tablespoon of Worcestershire sauce
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of cayenne pepper
- Salt and pepper to taste
Instructions
- Preheat your grill to 275°F using indirect heat. If using a charcoal grill, place the coals on one side and the ribs on the other. If using a gas grill, only turn on one side of the burners.
- Remove the membrane from the back of the ribs by sliding a butter knife under the membrane and then using a paper towel to grip and pull it off.
- Season the ribs generously with 1/4 cup of Memphis-style dry rub seasoning, making sure to coat both sides evenly. Let the ribs sit at room temperature for 15 minutes to allow the rub to adhere.
- Place the ribs on the grill, bone side down, and cook for 2.5 to 3 hours, or until the meat is tender and starts to pull away from the bones. Rotate the ribs every 30 minutes for even cooking.
- In a small saucepan, combine 1 cup of Memphis-style BBQ sauce, 1/4 cup of apple cider vinegar, 1/4 cup of brown sugar, 1 tablespoon of Worcestershire sauce, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1/2 teaspoon of cayenne pepper. Simmer over low heat for 10 minutes, stirring occasionally.
- During the last 15 minutes of cooking, baste the ribs with the BBQ sauce mixture every 5 minutes, allowing the sauce to caramelize and create a sticky glaze.
- Once the ribs are done, remove them from the grill and let them rest for 10 minutes before slicing and serving. Enjoy your delicious Memphis BBQ ribs!
