Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 pound pork shoulder, diced
  • 1 pound beef chuck, diced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 pound roasted green chiles, peeled, seeded, and chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
  • Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.
  • Add the diced pork shoulder and beef chuck to the pot, and cook until browned on all sides.
  • Sprinkle 1/4 cup of all-purpose flour over the meat and stir to coat evenly.
  • Pour in the chicken broth, and stir to combine, scraping up any browned bits from the bottom of the pot.
  • Add the chopped green chiles, diced tomatoes, ground cumin, and dried oregano to the pot, and stir to combine.
  • Bring the mixture to a simmer, then reduce the heat to low and cover the pot. Let the green chile stew simmer for 1 hour, stirring occasionally.
  • Season with salt and pepper to taste before serving.
