Colorado Green Chile

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 pound pork shoulder, diced
- 1 pound beef chuck, diced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 1 pound roasted green chiles, peeled, seeded, and chopped
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and cook until softened, about 5 minutes.
- Add the diced pork shoulder and beef chuck to the pot, and cook until browned on all sides.
- Sprinkle 1/4 cup of all-purpose flour over the meat and stir to coat evenly.
- Pour in the chicken broth, and stir to combine, scraping up any browned bits from the bottom of the pot.
- Add the chopped green chiles, diced tomatoes, ground cumin, and dried oregano to the pot, and stir to combine.
- Bring the mixture to a simmer, then reduce the heat to low and cover the pot. Let the green chile stew simmer for 1 hour, stirring occasionally.
- Season with salt and pepper to taste before serving.
- Serve hot and enjoy!
