  • 1 block of extra firm tofu, pressed and cubed
  • 2 tablespoons of soy sauce
  • 1 tablespoon of cornstarch
  • 2 tablespoons of vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1/2 cup of shredded carrots
  • 3 cloves of garlic, minced
  • 1 tablespoon of fresh ginger, grated
  • 1/4 cup of peanuts, chopped
  • Cooked rice or noodles, for serving

Instructions

  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until crispy and golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced bell peppers, broccoli, and shredded carrots. Cook for 3-4 minutes, or until the vegetables are tender-crisp.
  • Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes, until fragrant.
  • Return the crispy tofu to the skillet and add the chopped peanuts. Pour the spicy peanut sauce over the tofu and vegetables, stirring to coat everything evenly. Cook for 2-3 minutes, until the sauce is heated through.
  • Serve the spicy peanut tofu stir-fry over cooked rice or noodles. Enjoy!
