Ingredients
- 1 block of extra firm tofu, pressed and cubed
- 2 tablespoons of soy sauce
- 1 tablespoon of cornstarch
- 2 tablespoons of vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup of broccoli florets
- 1/2 cup of shredded carrots
- 3 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 1/4 cup of peanuts, chopped
- Cooked rice or noodles, for serving
Instructions
- In a bowl, toss the cubed tofu with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch until evenly coated.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until crispy and golden brown, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, heat the remaining 1 tablespoon of vegetable oil. Add the sliced bell peppers, broccoli, and shredded carrots. Cook for 3-4 minutes, or until the vegetables are tender-crisp.
- Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes, until fragrant.
- Return the crispy tofu to the skillet and add the chopped peanuts. Pour the spicy peanut sauce over the tofu and vegetables, stirring to coat everything evenly. Cook for 2-3 minutes, until the sauce is heated through.
