Black Bean Queso Fundido

Ingredients
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup chopped fresh cilantro
- Tortilla chips, for serving
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1/2 cup of diced onion and cook until softened, about 3 minutes.
- Add 2 cloves of minced garlic and cook for an additional 1 minute.
- Stir in 1 can of black beans, 1 teaspoon of ground cumin, 1/2 teaspoon of chili powder, 1/2 teaspoon of paprika, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 2-3 minutes, mashing some of the beans with the back of a spoon.
- Transfer the black bean mixture to a small baking dish. Sprinkle 1 cup of shredded Monterey Jack cheese and 1 cup of shredded cheddar cheese over the top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle 1/2 cup of diced tomatoes and 1/4 cup of chopped fresh cilantro over the melted cheese.
- Serve the Black Bean Queso Fundido hot with tortilla chips for dipping.
