  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint leaves
  • 1 lime, cut into wedges
  • Sriracha sauce, to taste

  • 1 cup firm tofu, cubed
  • 1 cup bean sprouts
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh mint leaves
  • 1 lime, cut into wedges
  • Sriracha sauce, to taste
  • Hoisin sauce, to taste

Instructions

  • In a large pot, add the vegetable broth, onion, garlic, ginger, cinnamon sticks, star anise, cloves, soy sauce, hoisin sauce, and brown sugar. Bring to a boil, then reduce heat and let simmer for 30 minutes.
  • While the broth is simmering, prepare the rice noodles according to the package instructions. Drain and set aside.
  • In a separate pan, heat a small amount of oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Set aside.
  • Once the broth is ready, strain it to remove the solids and return the liquid to the pot. Discard the solids.
  • To assemble the pho bowls, divide the cooked rice noodles among 4 serving bowls. Top with the cooked tofu, bean sprouts, cilantro, and mint leaves.
  • Carefully ladle the hot broth over the noodles and tofu in each bowl, ensuring that the ingredients are submerged in the broth.
  • Serve the pho with lime wedges, Sriracha sauce, and hoisin sauce on the side for each person to customize their bowl to taste.
