Created by: Howcan Team
Ingredients
- 8 cups vegetable broth
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 inch fresh ginger, sliced
- 2 cinnamon sticks
- 4 star anise
- 4 cloves
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon brown sugar
- 8 ounces rice noodles
- 1 cup firm tofu, cubed
- 1 cup bean sprouts
- 1/2 cup fresh cilantro, chopped
- 1/2 cup fresh mint leaves
- 1 lime, cut into wedges
- Sriracha sauce, to taste
- Hoisin sauce, to taste
Instructions
- In a large pot, add the vegetable broth, onion, garlic, ginger, cinnamon sticks, star anise, cloves, soy sauce, hoisin sauce, and brown sugar. Bring to a boil, then reduce heat and let simmer for 30 minutes.
- While the broth is simmering, prepare the rice noodles according to the package instructions. Drain and set aside.
- In a separate pan, heat a small amount of oil over medium heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Set aside.
- Once the broth is ready, strain it to remove the solids and return the liquid to the pot. Discard the solids.
- To assemble the pho bowls, divide the cooked rice noodles among 4 serving bowls. Top with the cooked tofu, bean sprouts, cilantro, and mint leaves.
- Carefully ladle the hot broth over the noodles and tofu in each bowl, ensuring that the ingredients are submerged in the broth.
- Serve the pho with lime wedges, Sriracha sauce, and hoisin sauce on the side for each person to customize their bowl to taste.

Chefs in Hanoi and Saigon have perfected the art of crafting this flavorful dish, with notable restaurants like Pho Gia Truyen in Hanoi and Pho Hoa in Saigon gaining widespread acclaim. The key to a great vegetarian Pho lies in the broth, which should be simmered with aromatic spices and herbs to achieve its signature depth of flavor. Today, the best versions of vegetarian Pho can be found in bustling cities like Ho Chi Minh City, where innovative chefs continue to push the boundaries of traditional recipes. Whether it's the addition of tofu or the careful balance of spices, vegetarian Pho offers a delightful twist on a classic Vietnamese dish.
