Ingredients
- 4 strips of veggie bacon
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup spicy salsa
- 2 large flour tortillas
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a large skillet, cook 4 strips of veggie bacon according to package instructions. Once cooked, remove from the skillet and set aside.
- In the same skillet, heat 1 tablespoon of olive oil over medium heat. Crack 4 large eggs into the skillet and cook to desired doneness, seasoning with salt and pepper to taste.
- Warm 2 large flour tortillas in the microwave for 20 seconds or in a dry skillet for 1 minute on each side.
- Divide the cooked eggs, veggie bacon, and 1/2 cup of shredded cheddar cheese evenly between the two tortillas.
- Top each burrito with 1/8 cup of spicy salsa.
- Fold the sides of the tortilla over the filling, then roll up tightly to form a burrito.
