  • In a large bowl, mix 4 packages of softened cream cheese, 1 1/4 cups sugar, and 1 teaspoon vanilla extract until smooth. Beat in 4 eggs one at a time, then stir in 1/2 cup sour cream. Pour half of the cream cheese mixture over the crust. Spoon 1/2 cup raspberry preserves over the cream cheese layer. Pour the remaining cream cheese mixture over the top.
  • Bake in the preheated oven for 55 to 60 minutes, or until filling is set. Allow to cool, then refrigerate for at least 4 hours before serving.
