Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup white sugar
- 1/2 cup butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 1/4 cups white sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 1/2 cup sour cream
- 1/2 cup raspberry preserves
Instructions
- Preheat the oven to 325 degrees F (165 degrees C).
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup sugar, and 1/2 cup melted butter. Press mixture into the bottom of a 9-inch springform pan.
- In a large bowl, mix 4 packages of softened cream cheese, 1 1/4 cups sugar, and 1 teaspoon vanilla extract until smooth. Beat in 4 eggs one at a time, then stir in 1/2 cup sour cream. Pour half of the cream cheese mixture over the crust. Spoon 1/2 cup raspberry preserves over the cream cheese layer. Pour the remaining cream cheese mixture over the top.
- Bake in the preheated oven for 55 to 60 minutes, or until filling is set. Allow to cool, then refrigerate for at least 4 hours before serving.
