Ingredients
- 4 slices of veggie bacon
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1 cup fresh spinach leaves
- 2 large flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large skillet, cook the veggie bacon over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, add 1 tablespoon of olive oil and sauté the fresh spinach leaves until wilted. Remove from the skillet and set aside.
- In a bowl, whisk together 4 large eggs and season with salt and pepper to taste.
- Pour the whisked eggs into the skillet and scramble until cooked through. Remove from the skillet and set aside.
- Place the flour tortillas on a clean surface. Divide the cooked eggs, sautéed spinach, crispy veggie bacon, and shredded cheddar cheese between the two tortillas.
- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- In the same skillet, heat the assembled burritos over medium heat for 2-3 minutes on each side, or until the tortillas are golden and crispy and the cheese is melted.
