Instructions

  • In a skillet over medium heat, cook the veggie bacon until crispy. Remove from the skillet and set aside.
  • In the same skillet, add a little cooking spray or oil if needed. Add the diced bell peppers and onions and sauté until they are tender.
  • Crack the eggs into the skillet with the sautéed vegetables. Season with salt and pepper. Cook, stirring occasionally, until the eggs are scrambled and fully cooked.
  • Warm the flour tortillas in the microwave or on a separate skillet for a few seconds to make them pliable.
  • Divide the scrambled eggs evenly between the two tortillas. Sprinkle the shredded cheddar cheese on top of the eggs, and then crumble the cooked veggie bacon over the cheese.
  • Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
  • Serve immediately, or wrap the burritos in foil to keep them warm for later.
