Ingredients
- 4 strips of veggie bacon
- 4 large eggs
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 2 large flour tortillas
- Salt and pepper to taste
- Cooking spray or oil
Instructions
- In a skillet over medium heat, cook the veggie bacon until crispy. Remove from the skillet and set aside.
- In the same skillet, add a little cooking spray or oil if needed. Add the diced bell peppers and onions and sauté until they are tender.
- Crack the eggs into the skillet with the sautéed vegetables. Season with salt and pepper. Cook, stirring occasionally, until the eggs are scrambled and fully cooked.
- Warm the flour tortillas in the microwave or on a separate skillet for a few seconds to make them pliable.

- Fold the sides of the tortillas over the filling, then roll them up tightly to form burritos.
- Serve immediately, or wrap the burritos in foil to keep them warm for later.
