Spicy Black Bean Vegetarian Nachos

Ingredients
- 1 can (15 oz) of black beans, drained and rinsed
- 1 tablespoon of olive oil
- 1 small onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1/2 teaspoon of chili powder
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- Tortilla chips
- 1 cup of shredded cheddar cheese
- 1/2 cup of diced tomatoes
- 1/4 cup of sliced black olives
- 1/4 cup of pickled jalapenos
- 1/4 cup of sour cream
- 1/4 cup of chopped fresh cilantro
Instructions
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and cook until softened, about 3 minutes.
- Stir in the minced garlic, cumin, chili powder, and cayenne pepper, and cook for another 1-2 minutes until fragrant.
- Add the drained and rinsed black beans to the saucepan and stir to combine with the onion and spice mixture. Cook for 5-7 minutes, mashing some of the beans with the back of a spoon, until heated through and slightly thickened. Season with salt and pepper to taste.
- Preheat the oven to 350°F (175°C).
- On a large baking sheet, spread out a layer of tortilla chips. Spoon the spicy black beans over the chips, then sprinkle with shredded cheddar cheese.
- Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced tomatoes, sliced black olives, pickled jalapenos, dollops of sour cream, and chopped fresh cilantro.
- Serve immediately and enjoy!
