  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 tablespoon of olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1/2 teaspoon of chili powder
  • 1/4 teaspoon of cayenne pepper
  • Salt and pepper to taste
  • Tortilla chips
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of diced tomatoes
  • 1/4 cup of sliced black olives
  • 1/4 cup of pickled jalapenos
  • 1/4 cup of sour cream
  • 1/4 cup of chopped fresh cilantro

  • Add the diced onion and cook until softened, about 3 minutes.
  • Stir in the minced garlic, cumin, chili powder, and cayenne pepper, and cook for another 1-2 minutes until fragrant.
  • Add the drained and rinsed black beans to the saucepan and stir to combine with the onion and spice mixture. Cook for 5-7 minutes, mashing some of the beans with the back of a spoon, until heated through and slightly thickened. Season with salt and pepper to taste.
  • Preheat the oven to 350°F (175°C).
  • On a large baking sheet, spread out a layer of tortilla chips. Spoon the spicy black beans over the chips, then sprinkle with shredded cheddar cheese.
  • Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and top with diced tomatoes, sliced black olives, pickled jalapenos, dollops of sour cream, and chopped fresh cilantro.
  • Serve immediately and enjoy!
