Ingredients
- 1 cup chickpea flour
- 1/4 cup rice flour
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- 1 tsp garam masala
- 1 tsp salt
- 1/2 cup water
- 2 cups mixed vegetables (such as onions, potatoes, cauliflower, spinach)
- Oil for frying
- 1 cup fresh mint leaves
- 1/2 cup fresh cilantro
- 1 green chili
- 1/2 inch ginger
- 1 garlic clove
- 1 tbsp lemon juice
- 1/2 tsp sugar
- Salt to taste
Instructions
- In a large mixing bowl, combine 1 cup chickpea flour, 1/4 cup rice flour, 1 tsp cumin seeds, 1/2 tsp turmeric, 1/2 tsp chili powder, 1 tsp garam masala, and 1 tsp salt.
- Gradually add 1/2 cup water to the dry ingredients, stirring to form a smooth, thick batter. Add more water if needed.
- Add 2 cups of mixed vegetables (such as onions, potatoes, cauliflower, spinach) to the batter and mix until well coated.
- Heat oil in a deep pan over medium heat. Drop spoonfuls of the vegetable batter into the hot oil and fry until golden brown and crispy. Remove and drain on paper towels.
- For the mint chutney, in a blender, combine 1 cup fresh mint leaves, 1/2 cup fresh cilantro, 1 green chili, 1/2 inch ginger, 1 garlic clove, 1 tbsp lemon juice, 1/2 tsp sugar, and salt to taste. Blend until smooth, adding a little water if necessary to achieve a dipping sauce consistency.
- Serve the vegetable pakoras hot with the mint chutney on the side. Enjoy!
