  • 1 cup quinoa
  • 2 cups water
  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

  • 1 cup quinoa

  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snap peas
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
  • In a small bowl, mix the cubed tofu with 1 tablespoon of soy sauce and set aside to marinate for 10 minutes.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the marinated tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  • In the same skillet, add the sesame oil and sauté the diced onion, minced garlic, and grated ginger until fragrant.
  • Add the bell pepper, broccoli, carrots, and snap peas to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  • Stir in the cooked quinoa and remaining 1 tablespoon of soy sauce. Cook for an additional 2-3 minutes, stirring constantly.
  • Gently fold in the cooked tofu and season with salt and pepper to taste.
  • Remove from heat and garnish with chopped green onions before serving.
