Ingredients

  • 1 cup dried green lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • Rinse the lentils under cold water and set aside.
  • In a large pot, heat 2 tablespoons of olive oil over medium heat.
  • Add the chopped onion, minced garlic, diced carrots, and celery to the pot. Cook for 5-7 minutes, or until the vegetables are softened.
  • Stir in the cumin, paprika, and turmeric, and cook for an additional 2 minutes to toast the spices.
  • Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat and let the soup simmer for 30-35 minutes, or until the lentils are tender.
  • Season with salt and pepper to taste.
