Ingredients
- 1 cup dried green lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 6 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion, minced garlic, diced carrots, and celery to the pot. Cook for 5-7 minutes, or until the vegetables are softened.
- Stir in the cumin, paprika, and turmeric, and cook for an additional 2 minutes to toast the spices.
- Add the rinsed lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat and let the soup simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
