Instructions

  • In a cezve (Turkish coffee pot), combine 2 cups of water and 2 teaspoons of sugar (if using).
  • Place the cezve over low heat and bring the water to a simmer, but do not let it boil.
  • Add 2 tablespoons of finely ground Turkish coffee to the cezve and stir gently to combine.
  • Allow the coffee to come to a gentle boil, then remove from heat and let the grounds settle for a few seconds.
  • Return the cezve to the heat and allow the coffee to come to a gentle boil again. Repeat this process one more time.
  • Pour the coffee into small espresso cups, allowing the grounds to settle before serving.
  • Serve with a glass of water to cleanse the palate.
