  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  • In a large skillet, cook 1 lb of ground turkey over medium heat until no longer pink. Drain any excess fat.
  • Add 1 packet of taco seasoning to the cooked turkey, following the instructions on the packet. Set aside to cool slightly.
  • In a large bowl, combine 1 head of chopped romaine lettuce, 1 cup of halved cherry tomatoes, 1/2 cup of black beans, 1/2 cup of corn kernels, 1/4 cup of diced red onion, and 1/4 cup of chopped cilantro.
  • Add the cooked turkey to the bowl and toss everything together.
  • In a small bowl, mix together 1/4 cup of sour cream, 1/4 cup of salsa, and the juice of 1 lime to make the dressing. Season with salt and pepper to taste.
  • Pour the dressing over the salad and toss to coat everything evenly.
  • Divide the salad among 4 plates and top each with diced avocado, shredded cheddar cheese, and a handful of tortilla chips.
