Created by: Howcan Team

Ingredients

  • 8 ounces of turkey sausage
  • 1 tablespoon of olive oil
  • 8 large eggs
  • 1/4 cup of milk
  • Salt and pepper to taste
  • 1 cup of shredded cheddar cheese
  • 4 large flour tortillas
  • 1/2 cup of salsa
  • 1/4 cup of chopped fresh cilantro

Instructions

  • In a large skillet, cook 8 ounces of turkey sausage over medium heat, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, heat 1 tablespoon of olive oil over medium heat. In a bowl, whisk together 8 large eggs, 1/4 cup of milk, and salt and pepper to taste. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and just set, about 3-4 minutes. Remove from heat.
  • Warm 4 large flour tortillas in the microwave for 20 seconds to make them pliable. Divide the scrambled eggs, cooked turkey sausage, and 1 cup of shredded cheddar cheese among the tortillas. Top each with 2 tablespoons of salsa and 1 tablespoon of chopped fresh cilantro.
  • Fold in the sides of each tortilla, then roll up tightly to enclose the filling and form a burrito.
  • If desired, heat a large skillet over medium heat and place the burritos seam-side down. Cook for 2-3 minutes on each side, or until golden and crispy.
  • Serve the extra cheesy turkey sausage breakfast burritos immediately, or wrap them in foil to keep warm for on-the-go enjoyment.
