Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and just set, about 3-4 minutes. Remove from heat.
  • Warm 4 large flour tortillas in the microwave for 20 seconds to make them pliable. Divide the scrambled eggs, cooked turkey sausage, and 1 cup of shredded cheddar cheese among the tortillas. Top each with 2 tablespoons of salsa and 1 tablespoon of chopped fresh cilantro.
