  • 3 tbsp fish sauce
  • 8 cups beef broth
  • 8 oz rice noodles
  • 1 lb beef sirloin, thinly sliced
  • 1 cup bean sprouts
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 2 limes, cut into wedges
  • 2 jalapeno peppers, sliced
  • Hoisin sauce and sriracha for serving

Instructions

  • In a large pot, char the onion and ginger over an open flame or under the broiler until slightly blackened.
  • In a dry skillet, toast the star anise, cloves, cinnamon stick, coriander seeds, and fennel seeds until fragrant. Place them in a spice bag or cheesecloth.
  • Add the beef bones, charred onion, ginger, spice bag, sugar, fish sauce, and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 3-4 hours, skimming off any foam that rises to the top.
  • Strain the broth and return it to the pot. Keep warm over low heat.
  • Prepare the rice noodles according to package instructions. Drain and set aside.
  • Divide the cooked rice noodles among 4 bowls. Top with raw beef slices, bean sprouts, and herbs.
  • Ladle the hot broth over the beef and noodles, allowing the heat to cook the beef. The beef should be slightly pink when served.
  • Serve with lime wedges, sliced jalapenos, hoisin sauce, and sriracha on the side for garnishing.
