Tofu and Vegetable Skewers

Ingredients
- 1 block of firm tofu, drained and cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into 1/2-inch rounds
- 1 red onion, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of rice vinegar
- 1 tablespoon of honey
- 1 teaspoon of minced garlic
- 1 teaspoon of grated ginger
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons of sesame oil, 2 tablespoons of rice vinegar, 1 tablespoon of honey, 1 teaspoon of minced garlic, and 1 teaspoon of grated ginger to make the marinade.
- Place the tofu cubes in a shallow dish and pour half of the marinade over the tofu. Toss to coat the tofu evenly. Cover and refrigerate for at least 20 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated tofu, red bell pepper, yellow bell pepper, zucchini, and red onion onto the soaked wooden skewers, alternating the ingredients.
- Brush the skewers with the remaining marinade and season with salt and pepper.
- Grill the skewers for 10-12 minutes, turning occasionally, until the tofu is lightly charred and the vegetables are tender.
- Serve the tofu and vegetable skewers hot with your favorite dipping sauce or over a bed of rice. Enjoy!
