Ingredients
- 1 lb of boneless, skinless chicken breast, diced
- 1 tablespoon of olive oil
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/2 teaspoon of paprika
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup of cooked rice
- 1 cup of canned black beans, drained and rinsed
- 1 cup of shredded cheddar cheese
- 1 cup of shredded lettuce
- 1 cup of diced tomatoes
- 1/2 cup of diced red onion
- 1/2 cup of sour cream
- 1/2 cup of salsa
- 2 ripe avocados
- 1/4 cup of chopped fresh cilantro
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the diced chicken breast to the skillet and season with 1 teaspoon of chili powder, 1 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of paprika, salt, and pepper. Cook until the chicken is cooked through, about 6-8 minutes. Set aside.
- In a small bowl, mash the ripe avocados with a fork. Add the chopped fresh cilantro, lime juice, salt, and pepper. Mix well to make the guacamole.
- Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
- Assemble the burritos by layering the cooked rice, black beans, seasoned chicken, shredded cheddar cheese, shredded lettuce, diced tomatoes, and diced red onion on each tortilla.
