  • 1 cup of canned black beans, drained and rinsed
  • 1 cup of shredded cheddar cheese
  • 1 cup of shredded lettuce
  • 1 cup of diced tomatoes
  • 1/2 cup of diced red onion
  • 1/2 cup of sour cream
  • 1/2 cup of salsa
  • 2 ripe avocados
  • 1/4 cup of chopped fresh cilantro
  • 1 lime, juiced

Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the diced chicken breast to the skillet and season with 1 teaspoon of chili powder, 1 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of paprika, salt, and pepper. Cook until the chicken is cooked through, about 6-8 minutes. Set aside.
  • In a small bowl, mash the ripe avocados with a fork. Add the chopped fresh cilantro, lime juice, salt, and pepper. Mix well to make the guacamole.
  • Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.
  • Assemble the burritos by layering the cooked rice, black beans, seasoned chicken, shredded cheddar cheese, shredded lettuce, diced tomatoes, and diced red onion on each tortilla.
