Ingredients
- 1 block of extra firm tofu, pressed and cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1 cup of pineapple chunks
- 1/2 cup of teriyaki sauce
- 2 tablespoons of olive oil
- 1 teaspoon of garlic powder
- 1/2 teaspoon of ground ginger
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, mix together the teriyaki sauce, olive oil, garlic powder, and ground ginger.
- Thread the tofu, bell peppers, red onion, and pineapple chunks onto the soaked wooden skewers, alternating the ingredients.
- Place the skewers in a shallow dish and pour the teriyaki marinade over them, turning to coat evenly. Let them marinate for at least 15 minutes.
- Preheat the grill or grill pan over medium-high heat. Lightly oil the grill grate or pan.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the tofu and vegetables are lightly charred and tender.
- Serve the skewers hot, and enjoy!
