  • 1/2 cup black beans, mashed
  • 1/2 cup corn kernels
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup bread crumbs
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 whole grain burger buns
  • Optional toppings: lettuce, tomato, onion, pickles, mustard, ketchup

  • 4 whole grain burger buns
  • Optional toppings: lettuce, tomato, onion, pickles, mustard, ketchup

Instructions

  • In a large mixing bowl, combine the mashed avocados, cooked quinoa, mashed black beans, corn kernels, diced red bell pepper, diced red onion, bread crumbs, cumin, chili powder, salt, and black pepper. Mix well until all ingredients are evenly combined.
  • Form the mixture into 4 equal-sized patties and place them on a plate. Refrigerate for at least 30 minutes to help the patties firm up.
  • Preheat a grill or grill pan over medium heat. Lightly oil the grill grates or pan to prevent sticking.
  • Place the avocado veggie burger patties on the grill and cook for 5-6 minutes on each side, or until they are heated through and have grill marks.
  • Toast the whole grain burger buns on the grill for 1-2 minutes, until they are lightly golden brown.
  • Assemble the burgers by placing the avocado veggie burger patties on the bottom buns, and adding any desired toppings such as lettuce, tomato, onion, pickles, mustard, or ketchup. Place the top buns on the burgers and serve immediately.
