  • 1 cup cooked quinoa or brown rice

Instructions

  • In a large bowl, combine the chicken pieces with 1 tablespoon of olive oil, chili powder, cayenne pepper, garlic powder, salt, and black pepper. Toss to coat the chicken evenly.
  • Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until fully cooked and slightly browned. Remove from heat and set aside.
  • In a separate bowl, combine the diced mangoes, red bell pepper, cilantro, and red onion. Toss to mix well.
