Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, diced
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped red onion
- 1 cup cooked quinoa or brown rice
- 1 lime, cut into wedges
Instructions
- In a large bowl, combine the chicken pieces with 1 tablespoon of olive oil, chili powder, cayenne pepper, garlic powder, salt, and black pepper. Toss to coat the chicken evenly.
- Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes, or until fully cooked and slightly browned. Remove from heat and set aside.
- In a separate bowl, combine the diced mangoes, red bell pepper, cilantro, and red onion. Toss to mix well.
- To assemble the bowls, divide the cooked quinoa or brown rice among 4 serving bowls. Top with the cooked spicy mango chicken and the mango salsa mixture.
