Teriyaki Tofu and Vegetable Skewers

Ingredients
- 1 block of firm tofu, pressed and cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into 1/2-inch rounds
- 1 red onion, cut into 1-inch pieces
- 1/2 cup of teriyaki sauce
- 2 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 1 tablespoon of sesame oil
- 1 tablespoon of honey
- 1 teaspoon of grated ginger
- 1 teaspoon of minced garlic
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a small bowl, whisk together the teriyaki sauce, soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic to make the marinade.
- Place the tofu cubes in a shallow dish and pour half of the marinade over the tofu. Toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated tofu, bell peppers, zucchini, and red onion onto the soaked skewers, alternating the ingredients.
- Season the skewers with salt and pepper.
- Grill the skewers for 10-12 minutes, turning occasionally and basting with the remaining marinade, until the tofu is golden and the vegetables are tender.
- Serve the skewers hot with any remaining marinade on the side for dipping.
